Method
- Boil the pasta in salted water until al dente. Reserve 1/2 cup of pasta water before draining.
- Sauté the onion in olive oil and butter over medium heat until soft, then add minced garlic and cook for 1 minute.
- Stir in the tomato paste and dried basil, cooking for 2 minutes to darken the color.
- Pour in the heavy cream and simmer gently for 2 minutes. Stir in the parmesan cheese until melted.
- Toss the cooked pasta into the sauce, adding reserved pasta water if needed to thin it out. Serve hot.
Notes
- Use fresh parmesan for the smoothest melt.
- Do not rinse the pasta.
