Prep Zucchini: Toss shredded zucchini with kosher salt in a colander. Let sit for 20 minutes. Wrap in a kitchen towel and squeeze out as much water as possible.
Make Crust: Preheat oven to 400°F. Mix the dry zucchini shreds with eggs and parmesan. Press evenly into a lightly greased 9x13 baking dish.
Bake Base: Bake the crust uncovered for 20 minutes until the edges are golden brown. Remove from the oven.
Cook Meat: While the crust bakes, brown the ground turkey and diced onions in a skillet over medium heat. Drain excess fat and stir in the pizza sauce.
Assemble and Bake: Spread the meat sauce over the baked crust. Top with mozzarella, oregano, and pepperoni. Bake for another 15 minutes until the cheese is bubbling.
