Ingredients
  

  • 4 cups fresh zucchini, coarsely shredded
  • 0.5 tsp kosher salt
  • 2 large eggs, lightly beaten
  • 0.5 cup grated parmesan cheese
  • 1 lb lean ground turkey
  • 0.5 cup yellow onion, diced
  • 1 cup sugar-free pizza sauce
  • 1.5 cups shredded mozzarella cheese
  • 1 tsp dried oregano
  • 0.5 cup sliced turkey pepperoni

Method
 

  1. Prep Zucchini: Toss shredded zucchini with kosher salt in a colander. Let sit for 20 minutes. Wrap in a kitchen towel and squeeze out as much water as possible.
  2. Make Crust: Preheat oven to 400°F. Mix the dry zucchini shreds with eggs and parmesan. Press evenly into a lightly greased 9x13 baking dish.
  3. Bake Base: Bake the crust uncovered for 20 minutes until the edges are golden brown. Remove from the oven.
  4. Cook Meat: While the crust bakes, brown the ground turkey and diced onions in a skillet over medium heat. Drain excess fat and stir in the pizza sauce.
  5. Assemble and Bake: Spread the meat sauce over the baked crust. Top with mozzarella, oregano, and pepperoni. Bake for another 15 minutes until the cheese is bubbling.

Notes

  • Squeezing the zucchini dry is the most important step to prevent a watery casserole.
  • Let the dish rest for 10 minutes before slicing so the layers can set properly.
