Ingredients
  

  • 4 large biscuits, split in half store-bought or homemade
  • 1/2 lb medium shrimp, peeled, deveined, and roughly chopped
  • 1/2 cup lump crab meat, drained picked over for shells
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 3 tbsp cream cheese, softened
  • 2 tbsp mayonnaise
  • 1 tsp Old Bay seasoning
  • 1/2 tsp smoked paprika
  • 1 tbsp fresh lemon juice
  • 1/4 cup green onions, sliced
  • 1 cup shredded mozzarella or Gruyere cheese
  • salt and black pepper to taste

Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Arrange biscuit halves cut-side up.
  2. Cook the garlic in melted butter over medium heat in a skillet for about 60 seconds until fragrant.
  3. Add shrimp and cook for 2 to 3 minutes until pink and opaque. Remove from heat immediately.
  4. Mix the filling by combining cooked shrimp, crab meat, cream cheese, mayonnaise, Old Bay, smoked paprika, lemon juice, and green onions in a bowl. Stir gently.
  5. Load the biscuits by spooning the seafood mixture evenly over each biscuit half and pressing lightly.
  6. Top with cheese and bake for 8 to 10 minutes until melted and bubbling.
  7. Broil for 1 to 2 minutes for a golden cheese top. Watch closely to avoid burning.
  8. Serve immediately garnished with extra green onions or a squeeze of fresh lemon.
