Ingredients

  • 1 cup unsalted butter, softened (226g)
  • 1 1/2 cups dark brown sugar, packed (300g)
  • 1 large egg room temperature
  • 1 large egg yolk room temperature
  • 1 tbsp vanilla extract
  • 2 2/3 cups all-purpose flour (320g)
  • 1 tsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp salt

Equipment

  • Baking Sheet
  • Parchment paper
  • Mixing bowls

Method

  1. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. Cream the softened butter and brown sugar in a large bowl for 2-3 minutes until light and fluffy.
  3. Mix in the egg, egg yolk, and vanilla extract until well combined and smooth.
  4. Whisk the flour, cornstarch, baking soda, and salt in a separate medium bowl.
  5. Combine the dry ingredients into the wet mixture slowly, mixing only until no flour streaks remain.
  6. Scoop the dough into 1.5-tablespoon balls and place them on the baking sheet, 2 inches apart.
  7. Bake for 9-11 minutes. The edges should be set but the centers soft. Do not overbake.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
